Yes, I have a parsley plant going courtesy of Fresh Picks. It stays fresher in water - why didn’t I realize this before?
We were craving nachos so I got creative in the kitchen.

First I made a quick guacamole with two small avocados, diced red onion and garlic, and fresh cut parsley. I spiced it with sea salt, black pepper, cumin, and cayenne pepper - it needed lemons but was still yummy without the tang!

I had this delicious salsa I picked up at the Farmer’s Market - I love portabella mushrooms in anything. It makes any dish more substantial!

I sauteed black beans and onion with sea salt and olive oil spray and baked two whole wheat taco shells. I broke the shells, and layered the black beans, salsa, a sprinkling of non-fat cheddar, and guacamole on top.
